Preparation:
Put dried cherry tomatoes Mister Lupino
in tepid water (65%) and vinegar (35%) for 15 minutes; let them drip
and dry with scottex.
Boil dried courgettes Mister Lupino in water (70%) and vinegar (30%)
for 8 minutes; let them drip and dry with scottex.
Put dried peppers Mister Lupino in water (80%) and vinegar (20%) for
5 minutes; let them drip and dry with scottex.
Roll the slices of meat with the courgettes or the carrots previously
boiled in salted water.
Put the roulades on the skewers, alternating a roulade filled with
courgettes, a cherry tomato, a piece of pepper, a roulade filled with
carrots, a little onion. Cook in a frying pan with warm oil, salt
and pepper.
Serve with the sauce prepared in that
way: chop the onion, the clove of garlic,
the cherry tomatoes and mix together with yogurt, then add salt and
paprika. |
