MEAT AND VEGETABLES IN SKEWERS

For 4 people:
12 slices of beef
6 slices of dried courgettes Mister Lupino
6 little carrots
6 dried cherry tomatoes Mister Bio
6 little onions
Some slices of dried peppers Mister Lupino
oil, salt, pepper


Sauce:
125g of yogurt
1 onion
2 dried cherry tomatoes Mister Bio
1 clove of garlic
salt

Preparation:
Put dried cherry tomatoes Mister Lupino in tepid water (65%) and vinegar (35%) for 15 minutes; let them drip and dry with scottex.
Boil dried courgettes Mister Lupino in water (70%) and vinegar (30%) for 8 minutes; let them drip and dry with scottex.
Put dried peppers Mister Lupino in water (80%) and vinegar (20%) for 5 minutes; let them drip and dry with scottex.
Roll the slices of meat with the courgettes or the carrots previously boiled in salted water.
Put the roulades on the skewers, alternating a roulade filled with courgettes, a cherry tomato, a piece of pepper, a roulade filled with carrots, a little onion. Cook in a frying pan with warm oil, salt and pepper.
Serve with the sauce prepared in that way: chop the onion, the clove of garlic, the cherry tomatoes and mix together with yogurt, then add salt and paprika.
