RECONSTITUTING SUNDRIED CHERRY TOMATOES
Soak the tomatoes in warm water for 15 minutes to remove salt, rinse thoroughly then drain. For the classic Italian antipasto, cover with extra virgin olive oil, chopped parsley and garlic, capers and chilli peppers (if desire), leave to marinade for 4 hours. If not using immediately keep refrigerated for up to 1 month.
SERVING SUGGESTION
Ideal with fish and meat, added to pasta and rice dishes, casseroles, salads, crostini, savoury scones and bread.
