RECONSTITUTING GRILLED
SUNDRIED AUBERGINES
Place vegetables in a saucepan, cover with water and 4/5 tablespoons
of wine vinegar, bring to the boil and simmer for a further 1 to
2 minutes. Drain and press out excess water, use immediately.
SERVING SUGGESTION
Once reconstituted, these vegetables from the Mediterranean are
delicious in soups, pasta salads, in sauces and pates. Alternatively
marinate in extra virgin olive oil, garlic, chilli and herbs to
taste, leave for a few hours and then serve with slices of fresh
mozzarella cheese and a rocket salad.
